In the world production of vegetable oils soybean oil occupies a leading place. It is used in refined form in food, but mainly as raw material for the production of margarine. Soybean oil is widely used in the food industry. With its use on an industrial scale to produce a lot of different foods, including salads, margarine, bread, mayonnaise, non-dairy creamer for coffee and snacks. The high temperature of the smoke soybean oil can be used for frying.
A valuable component extracted from soybean seeds together with the fatty oil is lecithin, which is separated for use in the confectionery and pharmaceutical industries.
