Guar gum which acts as a thickener, stabilizer and emulsifier. Well soluble in cold water, increases the viscosity of the product. Used in the manufacture of sauces, mayonnaise, ketchup, ice cream, dairy desserts (yogurt), soups, beverages, bakery products, and the manufacture of meat products. In dairy products is used to hold moisture, in frozen foods is used as a viscosity regulator, for giving homogeneous creamy structure. The formation of stable suspensions facilitate the implementation and acceleration of the various process steps and helps to extend the shelf life of finished products. In the process the production of cheese guar gum contributes to the formation of a clot and increases the yield. Some special grades of guar gum powder more resistant to mechanical impact and easier to dissolve.

These qualities have been successfully used in the production of mayonnaise, milk desserts, ice cream, low-fat in the dressings.
