E200 sorbic acid – food additive, preservative

Natural source of sorbic acid are fruits of mountain ash. The Botanical name of the plant - Sorbus aucuparia – gave the name to this chemical.

Properties of sorbic acid:

- slowing the growth of microorganisms, which contributes to improved shelf life;

- the lack of microbicidal effects, that involves the use of only pure products;

- an inhibitory effect on certain bacteria, yeast, fungi;

- no effect on organoleptic properties of foods .

The use of sorbic acid

Due to the presence of preserving effect, sorbic acid is used in food industry as preservative E200.

The substance is used for the production of confectionery, bakery products, Margarines, fruit juices, dried fruits, cheeses, canned milk, milk-based desserts, soft drinks, fruit preservation, salted and dried fish, pies, as well as for treatment of food packaging and the surface of meat products.

Sorbic acid is also used in cosmetic and tobacco industry.

E200 influence on human health

Sorbic acid is permitted for use in food production in Russia and the EU.

The substance is completely absorbed by the body as fatty acid.

To date there are no studies proving the harm of sorbic acid for human health.

They mention the possibility of allergic reactions in skin tests, however, after oral administration, this effect was not observed.
