Nitrate food (KNO3) is a colorless crystalline salt,used for training(marinating) meat before heat treatment.Nitrate is the most important(in addition to the normal salt) additive to the meat,which not only helps to preserve the quality of the meat(destroying various putrefactive bacteria),but also improves the color and characteristic flavor of the meat. The use of nitrate of food(KNO3) ,containing only nitrate ions is more healthy and safe from all existing on the market of additives for meat processing.
