This product is widely used in the preparation of high-quality natural chocolate, as well as in cosmetics and even in medicine. Cocoa butter is obtained from cocoa liquor by pressing on hydraulic presses. Upon cooling the cocoa butter to a temperature below 20 °C it acquires a crystalline structure, becomes hard and brittle. To mitigate natural scent and remove odors cocoa butter is subjected to a deodorization treatment with steam under vacuum.
