Citric acid (C6H8O7) —
crystalline substance white, soluble in water,
soluble in ethanol, slightly soluble in diethyl ether. Weak
tribasic acid. Salts and esters of citric acid are called
the citrates.
Citric acid (E 330) is widely used as
additive in foodstuff and is used in the food industry in
as synthetic antioxidant and acidity regulator,
the coloring stabilizer, catalyst of hydrolysis.
The oil and fat industry citric acid prevents
products from the corrupting action of being in them traces of heavy
metals, by forming them of complex compounds. In this way
significantly reduces the likelihood of rancidity of fats, Margarines and
animal oil.
