In appearance the eggs of sockeye salmon differs from other salmon caviar — it is smaller (3-4. 5 mm in diameter) and deep ruby color. The taste is more acute than the eggs of other salmonids, has a distinct bitterness. As coho salmon caviar, it is much less available on the market, although it also has an impressive amount of nutrients.
