used in the food industry as a synthetic antioxidant and acidity regulator (E331), as well as the complexing agent, dispersing agent, a buffer (pH) and flavoring agent, emulsifier, salt-melter. Sodium citrate trehzameshchenny 2-water, or 5.5-water is widely used in confectionery and dairy industries (in the production of marmalade, marshmallow, soufflés, and concentrated powdered milk, pasteurized and sterilized milk, dairy products, canned milk, processed cheese, yogurt, aerated creams, soft drinks and baby food, i.e. there require more or less prolonged operation of heating milk), pharmaceuticals and medicine as an anticoagulant agent (preservative blood and other protein substances).
