The line includes:
- extruder;
- monopodial;
- rolling pin with the dough;
calibrator;
- needle drum;
- circular knives for longitudinal cutting;
knife mechanism;
- conveyor for removal of scraps;
- cross knife;
- stacker on a baking pan.
Technological process:
Ribbon of dough is formed roll extruder is calibrated to a predetermined thickness. Next is the shaping of the dough pieces using the cutter drum (for round) or a set of longitudinal and transverse blades (rectangular). The finished dough pieces are automatically stacked on the trays.
When working with puff pastry and some other types of test, the test tape is formed by the extruder, and served with the rolling pin mounted in special brackets. Further technological process is similar to working with cookie dough.
