Starch (C6H10O5)n is the polysaccharides amylose and amylopectin, the monomer is alpha-glucose. Starch synthesized by different plants in chloroplasts, under the action of light in photosynthesis, is somewhat different in structure of the grains, the degree of polymerization of molecules, structure of polymer chains and physico-chemical properties.
