Machining is an integral part of complex technological cycle of processing of milk. It consists in a mechanical impact on milk for the purpose of separation (cream and skim milk), improve the homogeneity and uniformity of the fat phase in milk before and after separation, as well as in preparation for receiving the same ratio of mass fraction of fat and dry substances in raw materials and finished product. The main operation of mechanical processing — separation, normalization and homogenization of milk.

Separation of milk

The process of separation is a mechanical separation of milk into fractions under centrifugal force. Separation is used for separating milk into cream and skim milk, as well as for cleaning of mechanical and natural (blood, mucus, etc.) impurities. In addition, when the separation of the serum secrete proteins that are receiving high fat cream, separate the microorganisms from the milk (bakteriologie), etc.

Under the action of centrifugal force the milk is separated due to the difference of densities of the fractions: the density of the dispersed phase (oil) is less than the dispersion medium (milk plasma), or the density of the dispersion medium (milk plasma) is less than the dispersed phase (particles of mechanical and natural impurities).

Separation of milk is carried out in special machines — separators. The separators are designed for separation of whole milk into cream and skim milk, called separators-remover, to clean and milk — separate-Rami-molokoochistitel. Separators-remover devices with normalization of milk are called separators-normalizers.
