Gelatin is colorless or light yellow color, without taste and smell. In water swells but does not dissolve. Mainly used for making jelly and marmalade. Gelatin, which swell when heated, dissolves, creating a liquid that solidifies into a jelly. Even the gelatin used for production of ice cream, preventing the crystallization of sugar and reduce the clotting protein.
