Sorbic acid (2,4-hexadienoic acid) unsaturated monobasic carboxylic acid of the aliphatic series. It is a food additive, synthetic preservative (E200), is a weakly-smelling, sour taste, monoclinically colorless crystals, insoluble in water. The sorbic acid crystals soluble in alcohol.
Sorbic acid is used for the purpose of preserving and prevent molding of soft drinks, fruit and berry juices, bakery confectionery (candy, jams, preserves, creams), as well as caviar, cheese, smoked sausages and in the production of condensed milk to prevent darkening (prevents the development of chocolate brown mold). It is also used for processing of packaging materials for food products.
